This book is born at the intersection of photography and the written word; from the dialogue between memory and the present; from the bond between what that movement was and what it still tells us today. Mantala together with Chroma Estudioa asked me to create this personal reinterpretation through 50 photographs, celebrating the 50th anniversary of what the Nueva Cocina Vasca (New Basque Cuisine) has been, is, and will be.
It is an invitation to look at the Nueva Cocina Vasca from a different perspective: through images that suggest and phrases that open new interpretations; to understand the legacy received, to appreciate it, and to project it into the future.
50 years ago, a group of chefs changed the history of our gastronomy. They pioneered a new way of working, sharing knowledge, and understanding the relationship with the territory. Their courage, commitment, and collective vision showed us a new path: that tradition is not something static, but a living heritage preserved through care, sharing, and renewal.
Today, through these images and words, we revisit the trace of that movement, as well as its enduring strength and relevance.
